Chickpeas- the wonder snack

Hold it! Drop those Doritos! It seems like every time you need a snack it has to contain super high levels of salt and have little nutritional value, well not any more.  This recipes gives you two options to create a flavorful snack that will really stick with you, so you wont be hungry 5 minutes after you eat them.  These are great as a snack, but can also be used to spice up your salad or meal.

S&S Recipe (smokey and salty)


  • chickpeas(from a can or bought dried and rehydrated)
  • chipotle powder
  • sugar
  • red pepper flakes
  • ground ginger
  • minced garlic

How to:

  1. preheat oven to 375
  2. lay chickpeas out on a lightly greased/sprayed cookie sheet
  3. if you have a mortar and pestle then use that to grind up seasonings if not put them in a baggy and smash them with a meat tenderizer
  4. use 3 dashes of chipotle, 2 dashes of garlic, 1 dash of ground ginger, pinch of sugar,and a  sprinkle of red pepper flakes
  5. once they are crushed, sprinkle all over the chickpeas, mixing them around to make sure they are properly coated
  6. sprinkle with salt and pepper
  7. then cook for 7 minutes, stir/ flip them and cook for another 7-10 minutes
  8. they will have a slight crunch on the outside but will be moist on the inside, you don’t want to over cook them or they will be dry
  9. eat hot or cold, or on top of salad.  store in the fridge
  10. enjoy!

Rosemary Garlic Recipe


  • minced garlic
  • rosemary
  • basil
  • season salt
  • chickpeas

How to:

  1. preheat oven to 375
  2. in mortar or plastic bag add 3 shakes garlic, 3 shakes rosemary, 1 dash season salt, and 1 dash basil
  3. crush until broken up and mixed
  4. in a lightly greased/sprayed pan lay out chickpeas
  5. sprinkle the seasoning over the chickpeas making sure they are thoroughly coated
  6. then put in oven to cook for 7 minutes
  7. take them out and stir them then cook for another 7-10 minutes
  8. they will be golden on the outside and moist on the inside
  9. great for snacking or salads

Polenta cake with Sassy BBQ Chicken

If you watch any of the cooking shows on today, they seem to always be cooking and using these fancy terms that you don’t even know if it sounds good, or gross.  Well I decided to be adventurous and try to make some of the things they do.  All they talk about is polenta cakes, it seems to be the base for half of their recipes.  So I tried such a thing and topped it with my sassy bbq chicken.  Well turns out they were right, it makes an interesting base and add a whole new layer of flavor.  It will be just what you needed to spice up your dinner.


  • quick cook polenta
  • chicken (breast or thigh or both)
  • bbq sauce
  • hot sauce
  • onion
  • garlic
  • butter
  • salt and pepper

How to: polenta cake

  1. follow the directions on the package to cook the polenta
  2. then pour into a flat bottom pan, so that the polenta lays 1 inch thick on the bottom
  3. then put in fridge to cool for about an hour
  4. after they are firm pull them out
  5. use a cookie cutter(circular) if you have it, if not just use a glass
  6. once you have your patties cut, put them back in the fridge until you need them
  7. in a skillet melt 1 tbsp butter and then add a tablespoon minced onion and 2 gloves minced garlic
  8. once they are slightly soft add the polenta cakes, season with salt and pepper
  9. let cook on each side for about 2-3 minutes

How to: chicken

  1. it works best if it is pre cooked chicken if not just slather it in bbq sauce and throw it into the oven until it is cooked
  2. then sliced up your chicken
  3. in a skillet (or wok) add chicken on med heat, then add some more bbq sauce, 3 dashes of hot sauce, and 1/2 tablespoon of butter
  4. let  cook, continue to add splashes of water and bbq/ hot sauce until the chicken is a light brown color
  5. then take two forks and pull apart chicken, in pan, creating a shredded/pulled chicken.  this should be done 5-10 minutes into cooking
  6. once all the chicken is shredded add your last bit of bbq sauce and water
  7. once that has cooked down, pull off polenta cakes and top them with your sassy chicken, serve and enjoy!

Confetti Peanut Butter Brownie

So there are occasions when the dynamic duos must be used.  We all know them, the salty and sweets, the sweet and more sweet, and then there’s the peanut butter and chocolate.  These powerful flavor combos are most commonly used for stressful days, traumatic breakups, or girls nights.  They are lethal in large doses and should be used with caution.  This recipe is sure to hit all your sugar taste buds and a couple more.  Best of all its soo easy and it can be made super quick, so you can comfort your best friends broken heart and have her laughing again in less than an hour ;]. 


  • Brownie mix
  • peanut butter

How to:

  1. it’s so easy
  2. cook brownie mix by the directions on the box, always go with the shorter length of time so if they say between 28-30 minutes go for the 28 because no one likes a crunchy brownie
  3. once the brownies have cooled, take 2 to 3 tablespoons of peanut butter and put it in a microwave safe bowl and cook for 1.5 minutes, or until melted
  4. one liquid dip a fork into it, the put the fork over the brownies and shake it, this will cause it to have a zebra stripped pattern.
  5. get all around it because you want peanut butter in every bite.
  6. then eat it! the peanut butter will harden up, but it’s just as good gooey 😀
