Lets Have a Party! Salsa

How many different holiday get togethers are there now a days? Well me and my italian blood, I get anxious if I go to a party empty handed.  So I will scour the house looking for something to make. Baking takes too long, cooking is never enough for everyone, and then I’m at a loss. Well that is where this recipe comes in.  It takes a few ingredients, most you’ll already have, and tastes great.  It can also feed a crowd! You will definitely want to keep this recipe for later use.  So lets have a party, and lets all bring snacks!


  • can black beans
  • can tomatoes
  • can corn
  • white onion
  • fresh tomato(optional)
  • lime juice and cilantro (or lime juice)
  • salt and pepper

How to:

  1. open can of black beans, drain and rinse until the water runs clear
  2. open can of corn, drain, but leave a little bit of the juices
  3. open tomatoes
  4. pour all 3 into a container
  5. add some salt and pepper, to taste
  6. use about half a white onion, less is more in this case because the flavors will deepen the longer it sits, and if you add too much it will begin to get spicy, and not in the best way
  7. if you have lime and cilantro use that, it will make it have a fresher taste.  But if not salsa tastes just as good. (this is also how you can regulate heat, if you like it hot, use hot salsa instead)
  8. mix, and DONE! It is as easy as open, chop, mix. and it really is a crowd pleaser

Quicker than Cooking the Pasta Alfredo

Since participating in our schools 24 hour scavenger hunt my meal times have been slightly skewed, so when I realized it was 10 o’clock and I hadn’t eaten any dinner yet I knew I needed something quick and delicious, and for some reason I had a serious craving for alfredo.  At first I was a little nervous to make this recipe, but I just went for it, and I am so happy I did, this recipe is so quick and simple and delicious.  This is a great recipe to use to wow someone for a dinner in, and will definitely will be a new friend favorite!  Did I mention that you’ll most likely have all the ingredients already? Possibly the best part of this recipe.


  • Milk
  • flour
  • butter
  • parmesan cheese
  • salt and pepper
  • dried garlic

How to:

  1. put your water on to boil, trust me your sauce will be done before your pasta
  2. in a sauce pan melt a tablespoon of butter, once melted add 2 tablespoons of flour and stir constantly.
  3. cook this for 3-5 minutes, making sure it doesn’t get too brown, once your rue is cooked, add 1 1/2 cups of milk (this is an eyeball estimation, I didn’t actually measure, but give your self about an inch of milk in the pan)
  4. whisk and raise the temperature to medium high.  Begin adding your salt and pepper, you want to add a generous amount of pepper, and just a pinch of salt.  Then add a dash of the dried garlic.
  5. your sauce should begin to thicken, you need to wish continuously, the milk can scald just by turning your back.  once its thickened significantly reduce the heat to medium low, and continue stirring.  add another round of pepper, and just a dash of garlic.
  6. when your sauce is how thick you want, add a generous splash of parmesan cheese, this could make your sauce a little gummy, just add some milk and stir.
  7. and DONE! This is the quickest sauce, and so much healthier and tastier than anything you could buy in the store or comes prepackaged
