This May Contain Nuts

Okay, this is all nuts, so if you have a nut allergy AVOID THIS, if not ENJOY THIS! This recipe is super simple and you likely already have the ingredients. Best part is it is fabulous hot/cold/even room temperature works! You can make it the night before and bring it for lunch the next day! It also won’t heat up your kitchen very much which is fabulous during this current heat wave. This is also great for picnics or something you have to bring a lot of something to, its just so easy.

Ingredients:

  • peanut butter (creamy is better than chunky but use what you have)
  • soy sauce
  • hot sauce
  • oil
  • dried garlic
  • salt
  • pepper
  • sugar (brown or white is fine)
  • vinegar (white/ rice is best but I used red wine and it was fine)
  • spagetti (or lo mien if you can get it)

How to:

  1. Put your water on to boil and cook pasta as directed on box
  2. In a mixing bowl place a tablespoon of peanut butter and then about 2 tea spoons of oil, mix until incorporated. (this is for one portion, increase as necessary)
  3. then add in a few generous shakes of garlic, 1 teaspoon should be sufficient, especially if you let it sit before you eat it.
  4. add a shake of salt and pepper, and just a splash of vinegar. Then a 1/2 teaspoon of sugar
  5. now add in a few generous splashes of hot sauce, especially if you like some kick to it, even if you don’t it is important to add just a bit for flavor. Add at least a half tablespoon of soy sauce to this, and mix well. It will likely look pasty.
  6. Add a bit of the starchy water you cooked your pasta in to it and it will loosen up. Now even if your going to eat this cold you want to mix it while the pasta is hot so it will incorporate and clingy properly.
  7. Its as simple as that folks 😀

Deconstructed Spinach Rice Ball

So every day at my work a food truck comes by and tempts me with delicious creations that he makes fresh every morning, one day I finally gave in and went down and tried one of his spinach rice balls. I don’t even really like spinach but DANG these were so good, so good in fact it was gone by 10 am (I have zero will power). Well I had a can of spinach in my cabinet and I was feeling slightly creative so I gave this recipe a go. It actually turned out pretty well and is surprisingly filing. It isn’t very complicated and doesn’t need many ingredients. Give it a try as your dinner soon!

Ingredients:

  • can of spinach (or frozen) drained
  • 3 cloves garlic
  • dried garlic
  • onion
  • salt and pepper
  • white rice
  • parmesan cheese
  • provolone sliced cheese or shredded mozzarella

How to:

  1. dice up the garlic and about a handful of onion. Start sautéing until the onion is clear and the garlic is just golden. It should be very fragrant. Add a base layer of salt and pepper.
  2. Add in your spinach and again add some salt and pepper. This spinach is kind of stinky so it needs a good amount of garlic salt and pepper, but theres a fine line between flavored and overwhelming. Use your nose to tell the difference.
  3. cook this for several minutes, stirring continuously. After a while and potentially a few more additions of dried garlic add a small pad of butter (this is optional but highly recommended)
  4. add some parmesan cheese and cook a little more. When it is done cooking, about 20 minutes of sautéing, add another sprinkle of parmesan cheese
  5. lay down your bed of rice and put your shredding or pieces of provolone on top, then your spinach. Mix it up to eat it! It is SO good. If your going to make this for a special someone make sure they eat a lot of it so your both have the inevitable garlic breath from this dish!

Teriyaki Steak

I cannot make any form of Asian cuisine. It always tastes way too healthy and just not right, but this tastes good. And it’s easy, like throw in a bag, throw in a pan easy. So although I would usually recommend just going to buy yourself some take out, this time try this simple recipe!

Ingredients:
-stir fry steak
– teriyaki sauce
– pineapple juice

How to:
1. Marinate steak in a bag with teriyaki and a few splashes of pineapple juice
2. Heat a skillet and pour it all in
3. There should be a good amount of liquid let this cook all the way down until your steak looks nice and glazed.
4. That’s it folks! It’s super easy and really tasty!

FINALLY Some Red Meat!!!

So since I’ve lived in the apartment I have yet to cook red meat, expect for the occasional ground beef and that is very rare. What is so awful is that steak is one of my favorite foods and I can’t even cook it. But while perusing the grocery store I stumbled upon stir fry steak (its sliced up steak) that was 4 bucks a pound and I thought it was a chance worth taking. I went with a classic mexican seasoned steak to wet my feet in the cooking experience. This is something that is a must buy if your living in an apartment and need that red meat fixing.

Ingredients:

  • stir fry steak
  • lime
  • dried garlic
  • cumin
  • ketchup
  • green olive juice
  • hot sauce
  • salt and pepper
  • white onion

How to:

  1. In a pan placed some sliced onion and set to medium to get soft.
  2. The longer you can let this marinade the better. The marinade consists of lime juice ( half of a lime is sufficient for a single portion of steak), dried garlic, cumin, salt and pepper.
  3. Let the onions get a few seconds in the pan before you add the steak and let this sauté for another few minutes.
  4. When the steak is halfway cooked add a little bit of ketchup, hot sauce, and a splash of olive juice. Also small bit of butter. This will make a nice sauce that the steak will soak up.
  5. let cook for about 10 minutes more until there is no more liquid and all the steak is cooked.
  6. then DONE! I ate this on a bed of rice with beans and some veggies. Its really quick and a really cheap way to get some red meat!
