A Hot Pot of Happiness

So after thanksgiving everyone is probably going on a raw vegetable diet and I have a few things to say to that; 1) your beautiful, you don’t need to worry 2) don’t bother, this is the season of eating and accept it 3) not all delicious things are fattening! Number three is most important because this morning I made a hot pot of deliciousness and although it tastes like a brownie in a mug it really doesn’t have many bad things in it and you can monitor the sugar content! This really does taste like a brownie in a mug, but it’s liquid and fabulous. This is a good drink as you have a relaxing morning post food coma!

-half and half
– baking cocoa/ cocoa power
-cinnamon (either a stick or powder)
-vanilla extract
-a piece of chocolate ( I highly recommend this but it’s not necessary)

How to:
1) get a sauce pot and add 1/2 a cup of milk and 1/2 a cup of water. Then just a splash of cream. And place this on medium/medium low heat.
2) add a tablespoon and a half of your cocoa powder and about 2 tablespoons of sugar ( less if you like it less sweet)
3) add a splash of vanilla extract (a generous one) then a sprinkle of cinnamon ( a little goes a long way)
4) let this cook stirring continuously
5) the milk will start to steam and once all the powder is dissolved add in your piece of chocolate.
6) let this cook until it just starts to form a soft boil. Then top with whip cream and enjoy!!!





Ludicrously Loaded Burrito

Sometimes simple things can be made into a surprisingly gourmet meal with just a few simple additions.  Tonight’s meal kind of falls into the center of lazy and gourmet.  Mostly because its a burrito, and fancy burritos aren’t really a thing, yet anyways.  But this is really filling and flavorful, and also really simple, which is the best of both worlds.  I know I always say recipes are easy, but this one is like REALLY simple.


  • refried beans
  • rotisserie chicken, or any cooked chicken
  • tortilla
  • shredded cheese
  • white onion
  • tomato
  • cumin
  • lime
  • salsa
  • sour cream
  • olives

How to:

  1. If you have rotisserie chicken, pull the meat off the bones with a fork to make it kind of shredded.
  2. Then place it in a pan and squeeze half a lime over it, then add a little cumin and let it cook on low.
  3. Dice up the tomatoes and onions.
  4. On your tortilla shell, put a layer of beans, then your onions and tomatoes. Then your cooked chicken, and then cover it in some cheese.
  5. cook in the microwave for a minute then add your sour cream, olives, and salsa. and enjoy!!!



Hard to Believe its Healthy

Okay, its not like the MOST healthy thing, but comparing it to the full fat version, its not so bad.  Im in LOVE with spaghetti squash, it is so versatile and it really hits the craving for pasta you may have.  This recipe is bubbly, cheesy, and filling.  Its also really easy.  This is perfect to make on a cold night, especially because you will be using oven 😀


  • spaghetti squash
  • low fat ricotta
  • low fat mozzarella cheese
  • marinara sauce

How to:

  1. cook the spaghetti squash.  I cut it in half, placed in a microwave safe bowl with a bit of water at the bottom, and microwaved for 15 minutes until tender.
  2. scoop out the seeds
  3. In that well you’ve just created place your marinara sauce, then some ricotta, then top it all with a delicious layer of mozzarella cheese.
  4. place in a 400 degree oven until the cheese is golden and bubbly
  5. oh man, this is a good one 😀





It’s Like a Little Bit of Heaven Plopped on my Plate

Okay so this blog is usually a place I post my own recipes and that’s it. But last night I had food soooo good it was worthy of a blog post. And I’m not exaggerating here. It wasn’t one of those situations your so damn hungry a French fry off the ground would taste like steak, no no I had eaten a good dinner and wasn’t even that hungry. This dessert could quite possibly be what dreams are made of. And it wasn’t just my dessert, everyone at the tables dessert was amazing and we all got different things. What I got was the Boston cream, well there take on it. Because normally I don’t like Boston cream things, but this way, I would never eat anything else again. But that’s not where it ended, I also had a little ice cream Sandwich with vanilla gelato and cherry almond Florentines, then whoopie pies which were like two pieces of brownie fudge with cream in the middle, and dotted on the plate was apricot sauce and they threw some fresh fruit on there to make you feel a bit healthier. It had everything you wanted, chocolate, fresh, fruit, ice cream, oh man, i would marry the person that came up with that I don’t care who they are or what they look like but in our marriage vows it would say they had to make that at least once a month. The other thing I tried was there molten cake, it was like chocolate volcano of happiness, if you are ever having a bad day, GO here and eat that, you won’t even remember why you were upset, but you’ll also be in a chocolate coma for 2 weeks.

What the Heck did I Buy at the Grocery Store?!

On this episode of what the heck did I buy at the grocery store I am doing a taste test of drinks.  The first one I tried is aloe vera drink, mango flavored.  So I’ve tried aloe vera drink before, and it is an experience, I’ll tell you that.  But this being the first time I had gone grocery shopping in a month I decided I needed to try at least 2 new things, and something I never explore is different kinds of drinks (mostly cause I always drink water).  So this drink jumped out at me as I passed it in the aisle for 2 reasons; 1) the “original” flavor is VERY green 2) it was only a dollar.  With nothing to loose I gave it a go.  This is what I think.

It is a very refreshing drink, it leaves no weird aftertaste and actually refreshes you.  The mango flavor I have is very tasty and not very fake tasting like a lot of mango drinks can sometimes be.  In flavor, it is a good drink.  It is a thin liquid, somewhere between the consistency of water and juice. Heres the kicker, it has chunks.  Yes chunks.  I believe they are chunks of aloe, so they are kind of squishy, and although they are small, you definitely notice when you have them in your mouth.  It is something you have to get used to for sure.

So although it is kind of weird to drink something with chunks, I would recommend you give it a try.  I also hear it has great health benefits.  So next time your in the super market, pick up some aloe vera drink, its worth the experiment!!

Pumpkin Ravioli in a Butter Onion Cinnamon Sauce

So this sounds really fancy, but it took like 15 minutes to make tops.  I also didn’t make the raviolis so please don’t think its that impressive.  Although its not impressive, it is delicious.


  • pumpkin ravioli
  • onions
  • butter
  • salt and pepper
  • cinnamon
  • white sugar

How to:

  1. so cook the ravioli as described on the package
  2. in a pan add a little bit of oil and let that get hot before adding a handful of sliced onions.
  3. your going to let these cook low and slow.  Adding salt and pepper as they cook.
  4. Once they are golden brown add a few shakes of sugar (less than like a teaspoon) and just a pinch of cinnamon, a little goes a long way.
  5. then add 2 tablespoons of butter to the pan and let cook a little bit more, still on low.
  6. once the raviolis are done, add then to the pan of butter sauce and let cook a little more, letting the flavors soak into the ravioli.
  7. add a touch of salt and then its time to eat!!





Cleverly Created Crepes

So since the apartment I’m currently living in is temporary I decided to not buy all of the essential things I normally do.  Such as flour, cooking spray, spices, basically everything I love to use daily.  And now looking down the barrel of less than two months here, I dont want to buy them now.  But when I woke up this morning and wanted crepes I was at a loss of what to do.  Something I do always have is baking mix (basically generic bisquick).  Although the box didnt have a recipe for crepes I decided to do a little experiment and yay cause it worked!! So if your itching for some crepes but dont own flour, give this recipe a try.  Also you should always have baking mix in the pantry, you can make EVERYTHING from it!


  • 1 cup of baking mix
  • 1 cup of milk
  • 1 egg
  • 1 tablespoon of sugar
  • splash of vanilla


How to:

  1. spray the pan.. and cook it like a normal crepe 😀 WEEE that was easy!!
