Creamy Buffalo Chicken Sauce

Okay this recipe sounds kind of weird, I accept that, but trust me it tastes REALLY good. When I came home today I knew I wanted something buffalo, I just wasn’t sure what. Instead of just making my usual chicken fingers and dipping it in buffalo sauce I decided to switch it up.  This sauce is a creamy sauce that tastes like buffalo chicken dip, except the chicken is what you pour the sauce onto. Its really easy and really good.  This sauce is made of cottage cheese also so its a great source of a bunch of good stuff and pretty healthy!! So when you are craving some buffalo something but don’t know what to make, give this recipe a try.  I do not think you will be disappointed.


  • some form of chicken, I used chicken fingers but you could use breast or tofu if you want
  • cottage cheese
  • buffalo sauce
  • ranch
  • some shredded cheese (optional)

How to:

  1. Start by cooking your chicken however you choose.
  2. In a sauce pan add about 1/2 cup of cottage cheese, a tablespoon of ranch, and however much buffalo sauce you are comfortable with.
  3. Continually whisking cook this on medium.
  4. You are going to bring the sauce up to a boil for 2 to 3 minutes and then let it simmer for a few more minutes.
  5. At this point your sauce should be creamy and not contain any of the clumps from the cottage cheese.
  6. I added a bit of cheese to my sauce but it doesn’t really need it
  7. Pour over your chicken and enjoy!!!




Potentially Marry Me, Pot Roast

They say the best way to a mans heart is through is stomach.  Well in fact the door swings both ways.  Listen up boys, we LOVE food, always.  But sometimes it can be hard to make awesome meals when you dont have much time and cooking can be complicated.  Well this is EASY.  Really easy, but it tastes like it took you hours to do and used about 100 ingredients.  So if you want a ring one way or another, make this for your significant other!! (okay that rhymed and Im super impressed)


  • Pot roast (literally labeled as such in the super market)
  • fingerling potatoes
  • onions
  • carrots
  • french onion soup mix
  • bit of oil
  • salt and pepper

How to:

  1. So you need a crock pot. Cut up about 1-2 onions depending on size and layer on the bottom of your pan, add just a bit of salt and pepper(not a lot the onion soup mix is salty).
  2. Then add a bit of oil and 4-5 carrots (I dont like carrots, but you have to add them for flavor). And a bay leaf
  3. then lay your meat on top, and pour the soup mix on top.
  4. Add about a cup of water so the meat is covered almost completely covered.
  5. Cook on high for about 4-5 hours( this will vary on meat size, it should start to pull apart).  When the meat is getting more tender add your potatoes to the crock pot and add a bit of extra water since they will soak up some.
  6. When its ready to be eaten take some pan juices and add to a pan.  Then add a bit of flour to make a quick cravy.  Just cook on medium high for a few minutes 😀
  7. AND DONE!! it was the easiest meal you barely worked to make!!





Apples a la Mode

I am all about the crock pot life now.  It has taken over.  But this recipe was a first, a dessert recipe!  Its really easy and lots of fun.  Plus it makes your house smell fabulous while you are cooking it!


  • apples
  • cinnamon
  • brown sugar
  • vanilla
  • ice cream

How to:

  1. So I was lazy and didnt peel the apples, but I would suggest not being lazy and peeling them.
  2. Slice up your apples and layer on the bottom of your crockpot.
  3. Cover in a bit of cinnamon, splash of vanilla, and brown sugar
  4. then cook on low for a long time, until soft
  5. then top with some ice cream and you have an instant dessert!



Fingerling French Fries with Lemon Parmesan Aioli

How fancy does that title sound, pretty fancy huh?  But in reality this recipe is like pennies to make and you have a lot of the ingredients in your house. Now when I went to my favorite place on earth, Haymarket, I got the deal of a century with 3 bags of things for 2 bucks. So I got a bag of colorful potatoes, a bag of onions, and a bag of fingerling potatoes.  There is something I need to admit to the 3 of you non family members that actually will read this ( 😉 jk) I LOVE fries.  Its like my kryptonite, who can say no to fries?! But they aren’t so good for you, so this recipe gives you a healthier and even more flavorful substitution.  Its really easy, and fun to eat, so give it a try!!


  • fingerling potatoes
  • dried garlic
  • parsley
  • salt and pepper
  • pan spray
  • mayonnaise
  • lemon juice
  • parmesan cheese

How to:

  1. I had a LOVELY assistant help me slice up all the potatoes, you want the decently thin and cut them the long way.
  2. Then you are going to lay them in a pan, spray some pan spray (or oil) on them and the add generous amounts of salt pepper, parsley, and just a bit of garlic.
  3. Then bake at 375 for about 10 minutes, then flip over and cook another 10, or until golden.
  4. For the aioli, add some mayonnaise to a bowl, then about a teaspoon of lemon and parmesan, salt and pepper, and a bit of dried garlic.  Whisky this all up until it is a thin sauce.
  5. Then dip your fries in them and enjoy!!
