Life has a very good way of getting in the way, and everyone has a list of things that get cut first when they are stressed and crunched for time. For most people, those things are food and exercise. Well don’t do that any longer! Have a quick healthy dinner in a matter of minutes. This perfect panini is great for an on the run dinner but still will fill you up.
- eggplant steaks
- balsamic reduction
- bread (I used sliced Italian)
- Assembly everything on the bread, then slowly cook it in a pan like a grilled cheese til melty 😀
- It takes about 10 minutes total to do!
