Quick Breakfast Hacks

This past week I have been seriously struggling to keep my head above water and that means all aspects of my life have gotten thrown under water.  Usually the first thing to go is how often I go to the gym, and after that, my meals go.  I wish it wasn’t the way it was, but alas it is.  But this week I did a better job of not succumbing to the stress.  I also have been trying to eat less sugar in my diet, and often breakfast is where you can consume a lot of hidden sugar, so these recipes have no added sugar.  These are quick breakfast hacks that fill you up with good stuff so you can tackle whatever you need to that day!

Warm Blueberries and Granola:

What you need: blueberries, granola

How you make it: I’ve been really into cooking in mason jars because I take them to class with me. So in a mason jar, add a handful of blueberries and microwave for 30 seconds – 1 minute until they have created their own liquid.  Then pour granola on top. EASY

Warm Peanut Butter Banana Granola:

What you need: 1 teaspoon peanut butter, 1/4 cup granola, 1 banana

How to: In a microwave safe bowl, add in your peanut butter and microwave for 30 seconds.  Then add in sliced bananas, mix together, and pour granola on top.

Banana Bread Oatmeal

What you need: 1/2 cup oatmeal, 1 banana, 1 teaspoon peanut butter, 1 pinch cinnamon, 3/4 cup water

How to:  In a microwave safe bowl, heat the oatmeal, water, and mashed banana.  Then stir in peanut butter and cinnamon and BAM. DONE

Eggs Rancheros: If you have a bit more time

What you need: cooked spinach, refried beans, fresh tomato, egg, avocado

How to:  Microwave the beans with a bit of cumin until they are warm.  In a pan cook the egg and spinach to how you like and layer over the beans.  Then add on the tomatoes, avocados, and hot sauce. This breakfast will fill you up for a long time!

So don’t go straight to the bagel or muffin if you are in a rush in the morning.  Try one of these instead!! Super easy, no added sugar, and it will keep you full all day!

Vegan, Gluten Free, Sugar Free Cookies You Actually Want to Eat

Sometimes trying to cook something gluten free or vegan has all these crazy ingredients that you will likely only use for this one recipe and then it will sit in your pantry for the next 2 years.  Well no longer.  This recipe is incredibly easy, just a few ingredients, that you probably already have. The best part is that everyone will love this recipe, people that aren’t following a vegan or gluten free diet will still want to eat it.   So what are we making?? Vegan, gluten free, sugar free apple crumble cookies.  Oh yes, they taste like you had apple crumble and rolled it into a cookie.  So try this sweet treat you wont feel guilty about.


  • 2 apples (any kind)
  • 1 cup oats
  • 2 teaspoons cinnamon
  • 1 teaspoon oil
  • 1/2 teaspoon baking powder
  • 1 pinch nutmeg
  • 1 pinch salt
  • Optional: dark chocolate morsels or caramel morsels

How to:

  1. Begin by peeling your apples and then cutting them into cm pieces.
  2. In a sautee pan, add the oil and once that is hot add the apples and cook on medium low heat.
  3. Periodically you are going to add 2 tablespoons of water to the pan to soften your apples.
  4. You want to cook them low and slow to render out all the sweetness from the apples. You should add water about 3-4 times, until there is somewhat of a little “sauce” in the pan and you apples are tender without being completely mushy.
  5. Once this has happened, transfer the cooked apples to a food processor and use the chop feature for a few pulses. Just a few pulses, you dont want to pulverize the apples.
  6. Transfer this mix to a bowl, add some more spices, then add in the oats and baking powder. You want your final mixture (before you bake) to feel slightly sticky but not too wet, and not too dry.  It shouldn’t stick to your hands but you should be able to mold it into a patty shape.  So you may need to alter the amount of oats you use to obtain this consistency.
  7. Place cookies on a sprayed cookie sheet and then bake in a 375 oven for 15 minutes until lightly golden.
  8. Super easy, roommate approved, vegan, gluten free, AND sugar free. But you wont even notice.
