Skirt Steak

Everyone knows I love steak, a lot.  But it used to be that I could only get it at home or restaurant. NO LONGER.  I have learned how to enjoy delicious steak that I can make for myself, and without a grill!  This skirt steak is stand alone delicious, but it can also be paired with a delicious pan sauce, or in a variety of different recipes.  Make this skirt steak and eat it 50 different ways all week long!! Happy eating!

Oh did I mention its a crock pot recipe?  So you can make it in the morning and enjoy it for dinner!


  • skirt steak
  • 1/2 white onion
  • 1/2 red pepper
  • 1 beef bouillon cube
  • 2 gloves garlic
  • 1/2 lime
  • 1 tablespoon butter
  • 1/2 cup water
  • 1 teaspoon garlic
  • 3 shakes hot sauce
  • salt and pepper

How to:

  1. I highly suggest beginning this recipe by searing the steak on each side.  About 2 minutes on each side to get the char marks on the meat.
  2. In a crock pot, put in in the sliced onions and pepper, garlic cloves, bouillon cube, water, and butter.  Squeeze in some lime juice and set the rind aside.
  3. Then lay your meat on top, place the lime rind on top of that, and cook on high for 4 hours.
  4. If you want a quick pan sauce, just place the drippings in a sauce pan and reduce on medium heat for 10ish minutes.  Really easy and already really delicious.
  5. Slice it up and enjoy in all sorts of applications! I enjoyed it in a taco and on top a salad.  Happy Eating!!

Let’s Celebrate More Birthdays

Last night was the amazing event, Relay for Life. The event and my team motivated me to keep fighting for a world with more birthdays.  And a very special birthday happened last night, my little’s.  She gave her all to put on the event and I thought she deserved a sweet treat that had it all to celebrate.  So happy birthday to you beautiful, I hope you enjoy your day.  But lets continue being motivated by the moving actions of last night to strive for a world with more birthdays. Then we can eat more cupcakes.

What were eating: Mocha cupcakes filled with coconut dolce de leche and espresso liquor buttercream

For the cupcakes:


  • 1 1/3 C flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (one stick)
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 pinch cinnamon
  • 1/2 cup milk
  • 1/2 cup hot water
  • 1 keurig k cup of coffee (whatever flavor)

How to:

  1. Begin by mixing the flour, cocoa powder, salt, and baking soda together. Set this aside.
  2. In a different bowl, beat the butter and sugar together until light and fluffy. About 2-3 minutes.
  3. On medium speed beat in one egg at a time. Mixing well between each addition.
  4. Add the vanilla and cinnamon.
  5. Before you continue, add 1 tablespoons of coffee grounds to hot water and let steep, this will be used in a later step.
  6. Slowly begin to add in half of the dry ingredients, and beat until just combined.
  7. Beat in the milk until just combined and then add in the other half of the dry ingredients.
  8. Add the hot water and coffee grounds and mix until just combined.  Add another tablespoon of coffee grounds and mix gently in.
  9. The batter will be light and fluffy. Bake at 350 for 15 minutes.
  10. Let cool completely before filling or frosting.

Coconut Dolce De Leche


  • 1/2 can Sweetened condensed milk
  • 1 tablespoon butter
  • 2 tablespoons shredded coconut

How to:

  1. In a sauce pan, melt the butter, then add in the sweetened condensed milk.
  2. Continue to cook on medium low heat until the mixture gets thick.  Stirring continuously!
  3. Add the shredded coconut and once you can draw a spatula through the center of the pan and you can see the bottom for a few seconds, its done.

Espresso Liquor Buttercream Frosting:


  • 2 sticks of butter, at room temp
  • 3 1/2 C powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoons espresso liquor
  • 1/4 cup heavy cream

How to:

  1. Whip the butter until light and fluffy. Slowly add in the sugar cup by cup.
  2. Then add in the vanilla.
  3. Continue to whip, adding the heavy cream tablespoon by tablespoon.
  4. Then add in the liquor tablespoon by tablespoon.
  5. Thats it!

Its a lot, but for the girl who does everything, she needed everything 😀

Beg For It Burger

It is hard to believe, but I have never made a burger.  That is before today.  I am trying to win a burger competition so I am playing off of some beginners luck to bring me victory with this burger.  Let me tell you, I think I got it.  Not only was the burger delicious and flavorful, the bacon onion spread is good enough to eat on ANYTHING.  I really mean anything, this stuff is magic happiness.  But all of it works together to make a deliciously happy burger.  Since summer is right around the corner, start dragging out those grills and give this recipe a try.

Ingredients( for 2 burgers):

  • 1/2 gala/green apple sliced thin
  • jalapeno havarti cheese
  • white onion
  • tablespoon molasses
  • tablespoon brown sugar
  • 5 pieces of cooked bacon
  • 1/2 grass fed standard, schweid &son ground beef 
  • 1 cup mushrooms
  • steak seasoning (red pepper, garlic powder, onion powder, pepper)
  • 1 teaspoon cumin
  • 1 avocado
  • 1 splash hot sauce
  • 1/2 teaspoon honey
  • 1/2 teaspoon lemon juice
  • 1 sprinkle chipotle
  • 1 sprinkle ginger powder
  • bread
  • arugula

How to:

  1. Lets begin with the bacon onion spread, since this takes the longest.  Begin by slicing one onion and cooking it on medium low heat with a splash of oil.
  2. Add in salt and pepper and cook the onions low and slow.  I would add a bit of water periodically just to help the process hurry along.
  3. Once the onions are tender and beginning to turn translucent, add the chopped bacon, molasses, and brown sugar.  Continue cooking for 20 minutes on low, it will get all happy and slightly mushy.  It will also get slightly caramelized, so you dont want to over cook it.
  4. Now for the burger, mince the mushrooms and add to the meat, then add cumin, and 2 tablespoons steak seasoning.  You dont want to add salt to the burgers until the patties are formed or it will draw out the juice.
  5. Morph your burgers into the shape you want, you want a bigger than you expect patty (about the size of your hand).  I added my cheese into the center of the burger because it keeps it nice and juicy but you can put it on top if you desire.
  6. I also cooked my burger in a frying pan (because I cant grill) and I cooked it for about 10 minutes on each side on high.  This rendered a medium well burger, so keep that in mind depending on your preference.
  7. Now while your burger is cooking, lets make the apple, honey, chipotle guac.  This is super simple, just mash an avocado, add 1/2 of a chopped apple, 1/2 teaspoon honey, 2 generous pinches of chipotle, 1 pinch ginger, salt, pepper, 1 teaspoon lemon juice, 1/2 teaspoon tabasco sauce.  If you don’t have avocado, you can just use mayo, either works.
  8. Once everything is cooked it is time for assembly.  This is how mine was built:
    1. Toasted chibata
    2. Arugula (or spinach)
    3. Burger
    4. Honey Chipotle Guac
    5. LOADS of the bacon onion spread.
    6. Top piece of bread
  9. Its big and messy and delicious, enjoy it!
