Breakfast of Champions

This morning started off right with a tug of war competition.  And to start the day off like that you have to start off on the right foot, and for me that meant a solid breakfast.  It is funny to think that I used to never eat eggs and now they are becoming my go to breakfast! But because I was in a rush, I had to make this eat it and be out of the house in 15 minutes, and it was quick enough for me to do that!  So even if you are in a rush you can make a fake gourmet breakfast! And although we didn’t win, I had a lot of fun and felt full and healthy!


How to:

  1. For this recipe you are using the eggplant steaks that are linked to this recipe, so those are already cooked.
  2. In a pan heat your bacon and eggplant and then once those are halfway done, add in your egg and arugula.
  3. I like to have some run to my yoke so I only cooked it for 5 minutes and then I layered the eggplant on the bottom, then the bacon, then the arugula, then egg, tomato, and basil.
  4. BAM! Breakfast so easy, and so quick!
