Quick Breakfast Hacks

This past week I have been seriously struggling to keep my head above water and that means all aspects of my life have gotten thrown under water.  Usually the first thing to go is how often I go to the gym, and after that, my meals go.  I wish it wasn’t the way it was, but alas it is.  But this week I did a better job of not succumbing to the stress.  I also have been trying to eat less sugar in my diet, and often breakfast is where you can consume a lot of hidden sugar, so these recipes have no added sugar.  These are quick breakfast hacks that fill you up with good stuff so you can tackle whatever you need to that day!

Warm Blueberries and Granola:

What you need: blueberries, granola

How you make it: I’ve been really into cooking in mason jars because I take them to class with me. So in a mason jar, add a handful of blueberries and microwave for 30 seconds – 1 minute until they have created their own liquid.  Then pour granola on top. EASY

Warm Peanut Butter Banana Granola:

What you need: 1 teaspoon peanut butter, 1/4 cup granola, 1 banana

How to: In a microwave safe bowl, add in your peanut butter and microwave for 30 seconds.  Then add in sliced bananas, mix together, and pour granola on top.

Banana Bread Oatmeal

What you need: 1/2 cup oatmeal, 1 banana, 1 teaspoon peanut butter, 1 pinch cinnamon, 3/4 cup water

How to:  In a microwave safe bowl, heat the oatmeal, water, and mashed banana.  Then stir in peanut butter and cinnamon and BAM. DONE

Eggs Rancheros: If you have a bit more time

What you need: cooked spinach, refried beans, fresh tomato, egg, avocado

How to:  Microwave the beans with a bit of cumin until they are warm.  In a pan cook the egg and spinach to how you like and layer over the beans.  Then add on the tomatoes, avocados, and hot sauce. This breakfast will fill you up for a long time!

So don’t go straight to the bagel or muffin if you are in a rush in the morning.  Try one of these instead!! Super easy, no added sugar, and it will keep you full all day!
