The Snack That Makes You Go, wait. what?

We have just marked a year since our beloved Matriarch, my Nonnie, has passed. One of the many wonderful things I have sought to find joy in over the last year has been her cookbooks. When you come from a family where food is love, holding onto these recipes feels like another way she is forever with me.

Going through her recipes, which have a lot of 50s and 60s interesting recipes, I stumbled upon this recipe for a “tomato snack”. Ultimately extremely curious by the ingredients, I had to try for myself. Because, I thought it was going to be weird. But somehow, no, it was wonderful. Although they sound a bit like a pregnancy craving, they have sweet, salt, crunchy, sour, all of the components you could want. They’re slightly addictive. Add these to your 50s themed nights, cocktail parties, or charcuterie boards.

Ingredients:

  • Cherry Tomatoes
  • Cooked crumbled bacon
  • Crushed potato chips
  • Hellman’s mayonnaise 

Directions

Scoop out tomatoes (a pain)

Blend rest of ingredients- stuff tomatoes

Delicious!

That is written just how I found it in her cookbook. So go with your heart with ratios, maybe you want more bacon, maybe more chips? You want just enough mayo to bring it together, but not so much its swimming in it!
