Greek-Easy- Delicious. Chicken Souvlaki

If you havent guessed, i love Greek food.  I had been mostly limited to greek salad and humus until i tried a Gyro( a greek wrap typically with lamb).  Unfortunately I don’t like lamb, but i loved all the other flavors or the wrap.  That is where Gyro’s slightly less known less complicated cousin, chicken souvlaki comes into play.  This dish is a little complicated because it has a couple of parts, so im going to break it down into sections, that you just put together at the end.

The Chicken comes first:

Ingredients:

  • chicken breast( defrost before cooking)
  • olive oil
  • red wine vinegar
  • lemons, or lemon juice
  • oregano
  • salt & pepper
  • garlic
  • orange juice

preparation: this is for 1 large chicken breast, just double for extra chicken

  1. in bowl create marinade/ dressing of: the juice of 1 lemon (around 1/2 Cup or a little more) , add a generous splash of red wine vinegar, add a SMALL splash of orange juice, add 3 dashes of oregano, and 3 dashes of garlic, finish with a small drizzle of olive oil.  Whisk together so its blended.
  2. Pat dry chicken breast and salt and pepper to taste
  3. on a cookie sheet, cover in tinfoil( because the sugar in the marinade could burn) and drizzle with olive oil, coating the pan
  4. place chicken on pan, allowing the bottom to be coated in oil
  5. cover thoroughly in the marinade( can let sit for about 1/2 an hour, or just cook right off)
  6. allow to cook at 400 degrees until the internal temperature is 165. you can flip the chicken half way through, or just leave on one side.  Depending on size, should be around 20 minutes( just remember to make sure internal temperature is above 165!! or it is not cooked!)

The best kind of pocket involves pita:

Ingredients:

  • lettuce (iceberg or romaine) sliced into shreds
  • kalamata olives
  • onions (preferably red) sliced
  • feta cheese
  • tomatoes(optional) diced
  • pita bread or Syrian bread – large is best to make wraps

The dressing:

  • lemon or lemon juice
  • oregano
  • garlic powder or minced garlic
  • salt pepper
  • olive oil
  • red wine vinegar

            – this dressing is 1 part lemon juice 1 part red wine vinegar and 1/2 olive oil. then 1 dash of all the spices. Whisk until smooth and add as much as you want onto your sandwich.

to assemble the sandwich:

  1. put pita bread into microwave for about 10 seconds until soft
  2. the add chicken and all the other good stuff as much as you want
  3. and finish with the dressing
  4. wrap it up, or fold it like a taco and enjoy!

This is simple and delicious, and everyone needs a G.E.D 😀
