One morning this summer me and my cousin woke up to find ourselves with rather unfortunate sunburns, and to make it worse we had to make breakfast. These muffins were the product of that morning. It bursts with red bits of cranberry and cherry and other berries, as well as other unique flavors that combine to form this delicious muffin. It is the perfect pick me up after a bad sunburn, but seeing as its winter, it’s a nice warming breakfast.
Ingredients:
- 1 3/4 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1/2 teaspoon baking soda
- 1 cup sour cream
- 1 egg (beaten)
- 2 tablespoons milk
- dried cranberries
- either dried cherries or maraschino cherries
- orange juice
- either raspberry or strawberry jelly
- almond and vanilla extract
How to:
- preheat oven to 400
- in large bowl mix all the dry ingredients ( flour, baking powder, salt, sugar, baking soda)
- in a small bowl mix egg, sour cream, and milk
- combine them in large bowl
- in yet another bowl (sorry you can not use this many dishes if you want) combine 2 handfuls of cranberries, 3 splashes of orange juice, 2 scoops of jelly, 1 generous splash of almond extract, and one light splash of vanilla extract. add also 7-10 maraschino cherries (chopped)
- add to muffin batter, mix until incorporated
- batter should look dry and lumpy
- then scoop into pre sprayed muffin tins (fill to about 2/3)
- put into oven for about 20-25 minutes or until golden brown
- remove from oven and let sit about a minute then enjoy!
- this makes about 12 muffins
