If you watch any of the cooking shows on today, they seem to always be cooking and using these fancy terms that you don’t even know if it sounds good, or gross. Well I decided to be adventurous and try to make some of the things they do. All they talk about is polenta cakes, it seems to be the base for half of their recipes. So I tried such a thing and topped it with my sassy bbq chicken. Well turns out they were right, it makes an interesting base and add a whole new layer of flavor. It will be just what you needed to spice up your dinner.
Ingredients:
- quick cook polenta
- chicken (breast or thigh or both)
- bbq sauce
- hot sauce
- onion
- garlic
- butter
- salt and pepper
How to: polenta cake
- follow the directions on the package to cook the polenta
- then pour into a flat bottom pan, so that the polenta lays 1 inch thick on the bottom
- then put in fridge to cool for about an hour
- after they are firm pull them out
- use a cookie cutter(circular) if you have it, if not just use a glass
- once you have your patties cut, put them back in the fridge until you need them
- in a skillet melt 1 tbsp butter and then add a tablespoon minced onion and 2 gloves minced garlic
- once they are slightly soft add the polenta cakes, season with salt and pepper
- let cook on each side for about 2-3 minutes
How to: chicken
- it works best if it is pre cooked chicken if not just slather it in bbq sauce and throw it into the oven until it is cooked
- then sliced up your chicken
- in a skillet (or wok) add chicken on med heat, then add some more bbq sauce, 3 dashes of hot sauce, and 1/2 tablespoon of butter
- let cook, continue to add splashes of water and bbq/ hot sauce until the chicken is a light brown color
- then take two forks and pull apart chicken, in pan, creating a shredded/pulled chicken. this should be done 5-10 minutes into cooking
- once all the chicken is shredded add your last bit of bbq sauce and water
- once that has cooked down, pull off polenta cakes and top them with your sassy chicken, serve and enjoy!
